The décor is designed for an enjoyable, timeless evening.
The power and finesse of Côte-Rôtie wines make them the perfect wine to pair with game and truffle dishes. But food and wine pairings are first and foremost a question of personal taste. Let yourself be guided initially by your desires.
- 800g rack of lamb
- 2 large sweet potatoes
- Turmeric
- Espelette pepper
- Fleur de sel
- Olive oil
- Breadcrumbs
For spice mix:
- 2 juniper berries
- The zest of a dried orange
- A handful of dried mint
- 1 dessert spoon of coriander grains
- 1 teaspoon ground long pepper
Brown the rack of lamb in a frying pan with some olive oil, browning each side equally.
Use a pestle and mortar (or blender if you're feeling lazy) to prepare a mixture of juniper berries, dried orange peel, dried mint, coriander grains, and pepper. When you have obtained a fine powder, mix in equal parts with the breadcrumbs. Coat the rack of lamb in the mixture, season and arrange on a baking dish in the shape of a ring. Place the dish in a hot oven at 22°C for 10 minutes, and serve with mashed sweet potato, seasoned with turmeric and Espelette pepper.
