The Côte-Rôtie AOC specifications state the following...

The Côte-Rôtie AOC applies only to red wines.
Their dark, almost black colour, characteristic of Syrah, changes over time to shades of garnet.

The bouquet blends complexity and elegance with noted of black berries and spices, and sometimes violet when assembled with Viognier.
When aged, the bouquet takes on a slightly smoky aroma (toast, coffee, cocoa, etc.), and stewed fruits.

On the palate the wine is characterised by smooth tannins with a roundness that is more pronounced when the wine contains some Viognier. Depending on custom, Viognier is used in a limited percentage. The smooth tannins are also perfect for traditional winemaking with whole bunches placed in the vats, lightly trod with feet with the cap submerged.
